Original Recipe Yield 1 - 9 inch pie Ingredients 1 recipe pastry for a 9 inch double crust pie 4 tablespoons quick-cooking tapioca 1/8 teaspoon salt 1 cup white sugar 4 cups pitted cherries 1/4 teaspoon almond extract 1/2 teaspoon vanilla extract 1 1/2 tablespoons butter Directions
1.Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in piepan. Set top crust aside, covered.
2.In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips!
3.Bake for 50 minutes in the preheated oven, until golden brown.
2 tablespoons butter 2 tablespoons minced shallot 1 cup roasted butternut squash 1/4 cup heavy cream 2 tablespoons freshly grated Parmesan cheese, grated 1 pinch salt and pepper 1 pinch freshly grated nutmeg 25 wonton wrappers,, thawed if frozen 8 tablespoons butter 15 sage leaves Directions
Roast butternut squash in a 400 degree oven, tossed in a bit of melted butter, salt and pepper, for 30-45 minutes or until tender.
Melt butter in a small sauce pan over medium heat. Add shallot and cook, stirring occasionally, until translucent, about 5 minutes. Meanwhile, puree squash with cream in a small food processor or blender until smooth. Season with salt, pepper and a pinch of nutmeg. Stir in parmesan cheese. Add squash puree to the shallots and stir to combine. Let cool completely.
Set out 6 wonton wrappers on a work surface. Keep the rest covered with plastic. Place about 1 teaspoon of the squash filling in each wrapper. Brush each edge with water then fold over to make a triangle shape, taking care to seal all the edges. Set aside. Repeat with remaining wrappers. If desired, you can refrigerate for a few hours now.
Set a large pot of well salted water to a soft boil. It shouldn't be too vigorous, or the raviolis will fall apart. Boil (in batches of 5) until they float, about 2 minutes. Remove from water and set in a small dish filled half way with hot water. Repeat. Heat a large skillet over medium heat. Add butter. When it begins to turn golden add sage leaves. Stand back because it will sputter a bit. Continue cooking about 1-2 minutes more, until sage is crisp and butter is golden brown and giving off a nutty fragrance.
Ingredients 1/2 cup butter, chilled 1/2 cup cream cheese 1 1/2 cups all-purpose flour 2 apples - peeled, cored, and thinly sliced 1 pear - peeled, cored and sliced 1/4 cup orange juice 1/3 cup brown sugar 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cardamom 1 1/2 tablespoons cornstarch 1/2 cup apricot jam, warmed
Directions 1. Cut the cold butter and cream cheese into the flour with a knife or pastry blender until the mixture resembles coarse crumbs. (This can also be done in a food processor: pulse the cold butter into the flour until the mixture resembles cornmeal; add the cream cheese and pulse until it's the size of small peas.) When you squeeze a handful of the mixture, it should form a ball. Shape the dough into a round disk, wrap it in plastic, and refrigerate for at least 1 hour. 2. Toss the sliced apples and pear with the orange juice. Whisk together the brown sugar, cinnamon, nutmeg, cardamom, and cornstarch. Toss the fruit with the sugar-spice mixture and set aside. 3. Preheat an oven to 375 degrees F (190 degrees C). Set out an 8-inch tart pan, or, if you'll be making a free-form tart (galette), lightly grease a baking sheet. 4. Roll the pastry out on a lightly floured work surface to form a 10-inch circle. Transfer the dough to the tart pan or baking sheet. Arrange the fruit decoratively in the tart pastry. If you're baking the tart on a baking sheet, leave a 2-inch rim of dough and fold it up over the edge of the fruit (the pastry folds will overlap).
Bake the tart in the preheated oven until the crust is browned and the filling is bubbly, about 30 minutes. Remove the tart from the oven and brush it with apricot jam.

Baked Fresh Cherry Pie

Original Recipe Yield 1 - 9 inch pie
Ingredients
1 recipe pastry for a 9 inch double crust pie
4 tablespoons quick-cooking tapioca
1/8 teaspoon salt
1 cup white sugar
4 cups pitted cherries
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 tablespoons butter
Directions
1.Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in piepan. Set top crust aside, covered.
2.In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips!
3.Bake for 50 minutes in the preheated oven, until golden brown.
Butternut squash ravioli. A perfect fall treat.
Ingredients
2 tablespoons butter
2 tablespoons minced shallot
1 cup roasted butternut squash
1/4 cup heavy cream
2 tablespoons freshly grated Parmesan cheese, grated
1 pinch salt and pepper
1 pinch freshly grated nutmeg
25 wonton wrappers,, thawed if frozen
8 tablespoons butter
15 sage leaves
Directions
Roast butternut squash in a 400 degree oven, tossed in a bit of melted butter, salt and pepper, for 30-45 minutes or until tender.
Melt butter in a small sauce pan over medium heat. Add shallot and cook, stirring occasionally, until translucent, about 5 minutes. Meanwhile, puree squash with cream in a small food processor or blender until smooth. Season with salt, pepper and a pinch of nutmeg. Stir in parmesan cheese. Add squash puree to the shallots and stir to combine. Let cool completely.
Set out 6 wonton wrappers on a work surface. Keep the rest covered with plastic. Place about 1 teaspoon of the squash filling in each wrapper. Brush each edge with water then fold over to make a triangle shape, taking care to seal all the edges. Set aside. Repeat with remaining wrappers. If desired, you can refrigerate for a few hours now.
Set a large pot of well salted water to a soft boil. It shouldn't be too vigorous, or the raviolis will fall apart. Boil (in batches of 5) until they float, about 2 minutes. Remove from water and set in a small dish filled half way with hot water. Repeat. Heat a large skillet over medium heat. Add butter. When it begins to turn golden add sage leaves. Stand back because it will sputter a bit. Continue cooking about 1-2 minutes more, until sage is crisp and butter is golden brown and giving off a nutty fragrance.
Place 5 ravioli on each plate and spoon

1/2 cup cream cheese
1 1/2 cups all-purpose flour
2 apples - peeled, cored, and thinly sliced

1/4 cup orange juice
1/3 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 1/2 tablespoons cornstarch
1/2 cup apricot jam, warmed
Directions
1. Cut the cold butter and cream cheese into the flour with a knife or pastry blender until the mixture resembles coarse crumbs. (This can also be done in a food processor: pulse the cold butter into the flour until the mixture resembles cornmeal; add the cream cheese and pulse until it's the size of small peas.) When you squeeze a handful of the mixture, it should form a ball. Shape the dough into a round disk, wrap it in plastic, and refrigerate for at least 1 hour.
2. Toss the sliced apples and pear with the orange juice. Whisk together the brown sugar, cinnamon, nutmeg, cardamom, and cornstarch. Toss the fruit with the sugar-spice mixture and set aside.
3. Preheat an oven to 375 degrees F (190 degrees C). Set out an 8-inch tart pan, or, if you'll be making a free-form tart (galette), lightly grease a baking sheet.
4. Roll the pastry out on a lightly floured work surface to form a 10-inch circle. Transfer the dough to the tart pan or baking sheet. Arrange the fruit decoratively in the tart pastry. If you're baking the tart on a baking sheet, leave a 2-inch rim of dough and fold it up over the edge of the fruit (the pastry folds will overlap).
Bake the tart in the preheated oven until the crust is browned and the filling is bubbly, about 30 minutes. Remove the tart from the oven and brush it with apricot jam.

Fresh Pear PieOriginal Recipe Yield 1 - 9 inch pie
Ingredients
1 recipe pastry for a 9 inch double crust pie
1/2 cup white sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice
Directions
1.Combine sugar, flour, salt, cinnamon, and lemon rind in mixing bowl.
2.Arrange pears in layers in a 9 inch pastry lined pan, sprinkling sugar mixture over each layer. Dot with butter. Sprinkle with lemon juice. Roll out remaining dough; cut slits for escape of steam. Moisten rim of bottom crust. Place top crust over filling. Fold edge under bottom crust, pressing to seal. Flute edge.
3.Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C), and bake for an additional 35 to 40 minutes.

I brought in a box of very nice designer clothing (Theory, BCBG, Rene Lezard, Big Star, DKNY etc) and the buyer would not take one piece == nothing! I guess my clothing was too nice. While waiting for him to go through my box, I looked around - wow, what a bunch of garbage! I knew I was in trouble when it seemed like most the clothing was of very poor quality (give me a break - $8 for a crappy t-shirt). I was hoping to maybe get $5 - $10 a piece, but nope, not a dime. I guess I wasn't "hipster" enough (I showed up in a North Face jacket and jeans, not some ragged looking clothing like they desire). Don't they want to add some quality items to their store?
